Pumpkin Bars with Cream Cheese Frosting

Ingredients

4 Eggs

1 Cup Oil

2 Cups Sugar

15 oz Pumpkin Puree

2 Cups Flour

2 Teaspoons Baking Powder

1 Teaspoon Baking Soda

½ Teaspoon Salt

2 Teaspoons Cinnamon

½ Teaspoon Ground Ginger

½ Teaspoon Cloves

¼ Teaspoon Nutmeg

Pumpkin Bar Directions

  1. Preheat oven to 350°F and grease a 9 x 13-inch baking pan. In a large bowl, beat together the eggs, sugar, oil, and pumpkin until well combined. In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.

  2. Add the dry ingredients to the wet and gently stir until well combined. Bake for 28-30 minutes or until a toothpick inserted in the middle comes out clean. Let cool completely.

 

Cream Cheese Frosting Ingredients

8 ounces cream cheese, softened

1/2 cup butter, softened

2 cups powdered sugar

1 teaspoon vanilla

1/8 teaspoon kosher salt

 

Beat the cream cheese and butter on high until smooth. Beat in the powdered sugar, vanilla, and salt until smooth. Do not over-beat. Spread on top of completely cooled bars. Cut into bars.
